Christmas Eve tomorrov. All (well almost...) food is prepared and now its time to let the cork pop out of this beauty for something invigorating while making s simple but yummy pasta and mushroom dinner.
I tasted this five years ago, and today I thought it was time to open a bottle. The nose is fresh, chalky and steely with notes of tangerines, matchbox, clay, dry vanilla fudge and oyster shells. Deep and complex. A hint of maturity but this has places to go.
The taste is racy and refined with notes of orange peel, chalk, matchbox and yellow apples. A long finish with a fine acidity. Drinking fine today but really needs another 4+ years in the cellar. Now to open another bottle to go with the pasta...
