This bottle was opened during Easter with some löjrom (the Swedish caviar, although better...) toasts - one of the better, and simple starters to a dinner, if paired with a bottle of Champagne that is!

2004 Blanc de Blancs, Pierre Moncuit
A young, fresh and pure nose with notes of yellow apples, butter cookies, pickled ginger, buckthorn and lots of sweet minerals. Very fine. Has that fresh "newly washed clothes" feeling about it.
The taste is cool and elegant with small, crispy bubbles and fine notes of elder berries, dry fudge, yellow apples and wet rocks. The finish is medium long and fine, but there is a hint of metal just at the end that´s not appealing. If that disappear with some bottle age, this could turn into a really fine bottle of bubbly in due course, say 6-8 years.
