I wanted something mature, velvety and hopefully rich to go along some grilled veal burgers. I found a 30 year old Aussie Cab - lets pull the cork and keep my fingers crossed...
1976 Cabernet Sauvignon, Seaview
It opens a bit funky but with air it expands into a mature, warm Cabernet (and some Shiraz...?) with notes of dried blueberries, black currant leaves, violets, chocolate wafers and some nice band aid aromas. With air it becomes more animalic, with warm stables in a distance. Very, very good.
The taste is mature, warm and medium bodied with notes of dry blueberry pie, violets, chocolate, moist undergrowth and a hint of dry vanilla. Soft, velvety tannins. The finish ends dry and warm. This wears its 30 years with ease, but any remaining bottles should be drunk sooner than later.
