Brunello & Risotto

During my Brunello Project, I only tasted one vintage from Villa Poggio Salvi, the 2001. I noticed that I had a 1998 and why not open it to go along a cep and sausage risotto?

1998 Brunello di Montalcino, Villa Poggio Salvi
A nicely evolved nose with notes of balsamico marinated black cherries, liquorice, violets and forest floor. After a while some compost scents. A fine mature complexity. Dried flowers. Evolves nicely over the evening.
The taste is semi mature, balanced and warm with notes of sweet/sour cherries, liquorice, rosemary and Tuscan gravel. The finish is medium long and nicely structured. Drinking very well on this day.
