Mushrooms, Pizza & Barolo!
We spent a couple of hours in the woods today and got home with two big baskets full of mushrooms. We had already decided that we were making home made pizza for dinner.
I made a pizza with truffel salami and fresh mushrooms right from the woods - stunningly good if you ask me! :-)
What to drink then...? Truffel salami + mushrooms + thirsty = Barolo!
2004 Barolo Pajana, Domenico Clerico
A deep, tight, concentrated nose with notes of sweet red cherries, masses of rosehips, licorice, fried mushrooms, dry resin, milk chocolate and sweet pipe tobacco. A fine warmth. Still young but oooh so promising!
The taste is young, potent, tight and lip smacking good with notes of hard cherry candy, dark cookie dough, mushrooms, moist undergrowth, licorice and some tobacco notes. The finish is long, intense and concentrated. This is very, very good although on the young side of things. Give this beauty at least 5 years.
