2012 Chablis Grand Cru Le Vaudésirs, Domaine Long-Depaquit
A long time favourite Chablis producer of mine, this 6 year old Grand Cru opens quite restrained and needed some time in the glass to reveal notes of oyster shells, flint, ripening yellow apples, cuccumber and gravel. Very fine. Needs time.
The taste is fresh, racy and stony with notes of lime peel, slate, white currants, dry grass and minerals. A fine, long, complex finish. Will turn out great if you leave it in the cellar for 6+ years. I will.
